The chocolate:

This 75% dark chocolate is made from rare Madagascar organic Criollo cocoa beans and has the typically rich, fruity taste of Madagascar chocolate. Citrus notes, light berry notes with subtle tartness and strong roasted notes - perfect balance of fruity acidity and sweetness.

The rare Criollo cocoa beans for this bar come from the in-house Bejofo Estate, which is located in the Sambirano Valley in north-west Madagascar. Only around 2 tons of Madagascar's Criollo cocoa beans are harvested in the Sambirano Valley each year and processed into great chocolate.

The Swede Bertil Åkesson was born with a fascination for cocoa and fine spices. After spending parts of his childhood in Madagascar, he decided as an adult to grow premium cocoa beans and spices in a sustainable way. On the one hand, ÅKESSON'S supplies chefs and chocolatiers around the world and, on the other hand, produces its own exclusive chocolates. The award-winning company's plantations are located in Madagascar, Brazil and Indonesia.

Cocoa production: Madagascar exports around 12 tons a year Cocoa cultivation: Around 35,000 farmers make a living from cocoa cultivation Flavors: Predominantly fruity, native, slightly acidic Even if less than 0.5% of the cocoa exported worldwide comes from Madagascar, it has a lot to offer: According to ICCO (International Cocoa Organization), Madagascar exports 100% fine flavor cocoa! So it's no coincidence that Madagascar, as the country of origin, has a steadily growing chocolate fan club. And this despite the fact that fine flavor cocoa was only introduced to Madagascar after French colonization in the 1800s. Originally grown on the east coast, cocoa farmers soon recognized the great potential of the northwestern Sambirano Valley. The combination of the natural minerals, the good soil quality, the microclimate, as well as the flora, fauna and topography form a unique "terroir" in which the fine, fruity flavors of the fine flavor cocoa can develop wonderfully.
