The chocolate:

This 75% dark chocolate is made from rare Madagascar organic Criollo cocoa beans and has the typically rich, fruity taste of Madagascar chocolate. Citrus notes, light berry notes with subtle tartness and strong roasted notes - perfect balance of fruity acidity and sweetness.

The rare Criollo cocoa beans for this bar come from the in-house Bejofo Estate, which is located in the Sambirano Valley in north-west Madagascar. Only around 2 tons of Madagascar's Criollo cocoa beans are harvested in the Sambirano Valley each year and processed into great chocolate.

And this despite the fact that fine flavor cocoa was only introduced to Madagascar after French colonization in the 1800s. Originally grown on the east coast, cocoa farmers soon recognized the great potential of the northwestern Sambirano Valley. The combination of the natural minerals, the good soil quality, the microclimate, as well as the flora, fauna and topography form a unique "terroir" in which the fine, fruity flavors of the fine flavor cocoa can develop wonderfully.
