Healthy drinking chocolate: Vegan iced chocolate with cocoa nibs and coconut cream

The days are getting longer, the temperatures are rising and we are switching from warm drinking chocolate to the summer alternative, iced chocolate. As true chocoholics, we don't just share any iced chocolate recipe here. But our absolute favorite version! The great twist on this recipe: the topping made of coconut whipped cream and crunchy cocoa nibs, which turns the iced chocolate into a real chocolate party! The recipe is also vegan and gluten-free and boasts lots of healthy ingredients, especially the superfood cocoa nibs. We'll share information about the health benefits of this cold drinking chocolate at the end of the article, because first things first...

Iced chocolate with coconut cream cocoa nibs topping

Preparing this cold drinking chocolate and topping is really easy. The only important thing is that you plan enough time. The coconut milk needs at least four hours in the fridge to cool down properly and for the cream to separate from the liquid. And the drinking chocolate should also be allowed to cool down briefly.

For a glass of drinking chocolate you need the following ingredients:

For the topping:

  • A can of coconut milk (make sure it is thick, creamy and full fat)
  • Whipped cream setting/cream stiffener
  • pure cocoa nibs (Theyo tip: our caramelized cocoa nibs are also very tasty, but a little less healthy)

Ingredients for one serving of iced chocolate:

  • 200 ml vegan milk substitute (oat drink, almond drink, ... the variant you like best)
  • approx. 14 Theyo drinking chocolate drops (equivalent to 25 g)
  • Ice cubes as desired
  • Cinnamon, optional
  • also optional: vegan sweetener such as date syrup or agave syrup

It's best to get your "tools" ready:

  • Hand mixer
  • Bowl
  • tablespoon
  • Pot for preparing drinking chocolate
  • Whisk
  • Glass for drinking chocolate
This is how you prepare the coconut whipped cream:

As already mentioned, the recipe requires some preparation. It's best to put the coconut milk in the fridge the evening before , but at least 4 hours beforehand. The bowl should also be really cold when preparing it , so put it in the freezer for about 15 minutes before you start. By the way, we only use the cream of coconut milk for the recipe, but you can easily use the leftover liquid in smoothies, for example. And: The topping is enough for at least 4 cups of iced chocolate, but also looks fantastic on other delicacies such as cakes or waffles!

When everything has cooled down nicely, we finally get started: Open the coconut milk and skim the hardened coconut cream from the liquid and put it in the cold bowl. Add the whipped cream setting agent and mix the whole thing with a hand mixer for 5-10 minutes until it has a creamy, creamy consistency. For an extra firm consistency, put the coconut whipped cream in the fridge for another hour, but you can still use it now!

Instant drinking chocolate in 5 minutes:

Add about half of the vegan milk alternative to the pot along with the chocolate drops and heat the mixture over medium heat. It is important that the drinking chocolate does not boil and that you stir constantly so that the chocolate does not burn on the bottom of the pot. Stir until the chocolate has dissolved, about 5 minutes. By the way, this process is even faster with our chocolate shaker . If you want, add the cinnamon now and if you like it a little sweeter, add the vegan sweetener. Now add the rest of the cold plant drink so that the chocolate is no longer quite as hot.

Either you wait a moment until the chocolate has completely cooled down, or you put it directly into the glass with the ice cubes. Then use a tablespoon to prepare the coconut whipped cream and sprinkle the cocoa nibs over it as desired. If you like cinnamon, you can also garnish the coconut cream with it.

And tada, your delicious, refreshing, cold drinking chocolate is ready :-)
